Description
A classic French dish made with caramelized onions, beef broth, and topped with melted cheese and crusty bread.

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 8 cups beef broth
- 1 cup dry white wine
- 1 teaspoon thyme
- Salt and pepper to taste
- 8 slices of French bread
- 2 cups grated Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the sliced onions and sugar, cooking until the onions are caramelized, about 30 minutes.
- Pour in the white wine and scrape the bottom of the pot to deglaze.
- Add the beef broth and thyme, then season with salt and pepper.
- Simmer for 30 minutes to allow flavors to meld.
- Preheat the oven to 350°F (175°C).
- Place the French bread slices on a baking sheet and toast in the oven until golden brown.
- To serve, ladle the soup into bowls, top with toasted bread, and sprinkle with Gruyère cheese.
- Place the bowls under the broiler until the cheese is bubbly and golden.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- Make sure to use a good quality cheese for the best flavor.
- Can be made ahead and reheated before serving.
