- 1/2 cup cottage cheese
- 1/2 cup chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk the egg whites until frothy.
- Add the cottage cheese, spinach, bell peppers, and cheese (if using) to the egg whites.
- Season with salt and pepper, and mix until well combined.
- Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes or until the bites are set and lightly golden on top.
- Let cool for a few minutes before removing from the muffin tin.
- Serve warm or store in the refrigerator for later.
