- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced

- Salt and pepper to taste

Instructions
- In a large pot, heat some oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced bell peppers and cook for another 5 minutes.
- Stir in the Spanish rice, cumin, paprika, salt, and pepper, and cook for 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in the black beans and cook for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
