Description

Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound sausage (Italian or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.
  3. In the same skillet, add onion and garlic, sauté until softened.
  4. Add diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper. Stir to combine.
  5. Transfer the mixture to a baking dish and top with cooked sausage.
  6. If using, sprinkle cheese on top.
  7. Bake for 30-35 minutes or until sweet potatoes are tender.
  8. Let cool for a few minutes before serving.
