- 2 large sweet potatoes, peeled and diced
- 1 pound sausage (Italian or your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.
- In the same skillet, add onion and garlic, sauté until softened.
- Add diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper. Stir to combine.
- Transfer the mixture to a baking dish and top with cooked sausage.
- If using, sprinkle cheese on top.
- Bake for 30-35 minutes or until sweet potatoes are tender.
- Let cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or spinach.
- This dish can be made ahead of time and reheated.
- For a spicier version, use spicy sausage.
