Description

Eyeball Meatballs are a fun and spooky dish perfect for Halloween or themed parties, featuring meatballs shaped like eyeballs with a delicious sauce.

Ingredients

Scale
  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar marinara sauce
  • 1 can black olives, sliced
  • 1/2 cup mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs, about the size of a golf ball.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 20-25 minutes, or until cooked through.
  6. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  7. Once the meatballs are done, remove them from the oven and place them in the marinara sauce.
  8. Top each meatball with a slice of black olive to create the ‘eyeball’ effect, and sprinkle with mozzarella cheese.
  9. Cover and simmer for an additional 5 minutes until the cheese is melted.
  10. Serve hot and enjoy your Eyeball Meatballs!

Notes

  • For a vegetarian option, substitute ground beef with plant-based meat.
  • These meatballs can be made ahead of time and frozen for later use.
  • Feel free to add your favorite herbs and spices to the meat mixture for extra flavor.
