A simple and delicious recipe for homemade beef stew that is perfect for any occasion.

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside.
- Add onions and garlic to the pot, sauté until softened.
- Stir in tomato paste, thyme, and rosemary.
- Add the beef back to the pot along with the beef broth.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Add carrots and potatoes, and continue to simmer for another 30 minutes or until vegetables are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker stew, you can add a cornstarch slurry at the end.
- Feel free to add other vegetables like peas or green beans.
- This stew can be made in a slow cooker for convenience.
