Description

A delicious and easy-to-make green enchilada chicken soup that is perfect for any occasion.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (10 oz) green enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine the chicken broth and green enchilada sauce over medium heat.
  2. Add the shredded chicken, black beans, corn, diced tomatoes, cumin, garlic powder, onion powder, salt, and pepper.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
  4. If desired, stir in shredded cheese until melted.
  5. Serve hot, garnished with fresh cilantro.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a spicier version, add diced jalapeños or a dash of hot sauce.
