Description

A simple and comforting chicken pot pie made effortlessly in a crockpot, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 package refrigerated pie crusts (2 crusts)
  • Salt and pepper to taste

Instructions

  1. In a crockpot, combine the shredded chicken, frozen vegetables, cream of chicken soup, chicken broth, onion powder, garlic powder, thyme, salt, and pepper.
  2. Stir the mixture until well combined.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, roll out the pie crusts and place one on top of the chicken mixture in the crockpot.
  5. Cover and continue cooking until the crust is golden brown.
