A delicious and easy-to-make no bake pumpkin cheesecake bars that are perfect for fall gatherings.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup pumpkin puree
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup whipped cream
Instructions
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a 9×9 inch pan.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice to the cream cheese and mix until well combined.
- Fold in the whipped cream gently until fully incorporated.
- Spread the pumpkin cheesecake mixture over the crust evenly.
- Refrigerate for at least 4 hours or until set.
- Cut into bars and serve chilled.
Notes
- For a spicier flavor, add more pumpkin pie spice to taste.
- These bars can be made a day in advance for convenience.
- Top with additional whipped cream before serving for extra flair.
