A simple and flavorful recipe for Asado Chicken served with a refreshing lemon zucchini sauté.

- 4 chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon vinegar
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 zucchinis, sliced
- 1 lemon, juiced
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, soy sauce, vinegar, garlic, paprika, salt, and pepper.
- Marinate the chicken thighs in the mixture for at least 30 minutes.
- Place the marinated chicken in a baking dish and bake for 25-30 minutes or until cooked through.
- While the chicken is baking, heat a skillet over medium heat and add sliced zucchinis.
- Sauté the zucchinis for about 5 minutes, then add lemon juice and cook for an additional 2 minutes.
- Serve the chicken hot with the lemon zucchini sauté on the side, garnished with fresh parsley.
Notes
- For extra flavor, let the chicken marinate overnight.
- Feel free to add other vegetables to the sauté.
- This dish pairs well with rice or quinoa.
