Description

A simple and flavorful recipe for Asado Chicken served with a refreshing lemon zucchini sauté.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 zucchinis, sliced
  • 1 lemon, juiced
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix olive oil, soy sauce, vinegar, garlic, paprika, salt, and pepper.
  3. Marinate the chicken thighs in the mixture for at least 30 minutes.
  4. Place the marinated chicken in a baking dish and bake for 25-30 minutes or until cooked through.
  5. While the chicken is baking, heat a skillet over medium heat and add sliced zucchinis.
  6. Sauté the zucchinis for about 5 minutes, then add lemon juice and cook for an additional 2 minutes.
  7. Serve the chicken hot with the lemon zucchini sauté on the side, garnished with fresh parsley.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Feel free to add other vegetables to the sauté.
  • This dish pairs well with rice or quinoa.
