Ingredients

- 4 cups vegetable broth
- 2 packs of ramen noodles
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon tahini
- 1 cup sliced mushrooms
- 1 cup bok choy, chopped
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- In a large pot, heat sesame oil over medium heat.
- Add sliced mushrooms and sauté until they are soft.
- Pour in the vegetable broth and bring to a boil.
- Add the ramen noodles and cook according to package instructions.
- Stir in soy sauce and tahini until well combined.
- Add bok choy and carrots, cooking for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with green onions and sesame seeds.
Notes
- Feel free to add any other vegetables you like.
- For extra protein, consider adding tofu or edamame.
