Ingredients

  • 1 cup orzo pasta
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then add the orzo pasta.
  5. Reduce heat and simmer for about 10-12 minutes, or until the orzo is tender.
  6. Stir in the chopped spinach and cook for an additional 2 minutes.
