Description

Delicious Chicken Enchiladas are a comforting dish filled with shredded chicken, cheese, and a rich enchilada sauce, perfect for any occasion.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 corn tortillas
  • 1/2 cup chopped onion
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the shredded chicken, cumin, garlic powder, salt, and pepper to the skillet, mixing well.
  4. Warm the corn tortillas in a separate pan or microwave until pliable.
  5. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the chicken mixture and a sprinkle of cheese, then roll them up and place seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Serve hot with a dollop of sour cream on top.

Notes

  • For a spicier version, add diced jalapeños to the chicken mixture.
