- 1 pound Italian sausage
- 1 package (9 ounces) refrigerated tortellini
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 1 cup chicken broth
- 1 cup spinach, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet, brown the Italian sausage over medium heat until fully cooked.
- Drain excess fat and transfer the sausage to the slow cooker.
- Add diced tomatoes, tomato sauce, chicken broth, spinach, Italian seasoning, salt, and pepper to the slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 4 hours.
- About 30 minutes before serving, add the tortellini to the slow cooker and stir.
- Continue cooking until the tortellini is tender.
- Serve hot and enjoy!

- Feel free to add other vegetables like bell peppers or mushrooms.
- This dish can be topped with grated Parmesan cheese before serving.
