Description

A delicious and tender crockpot pot roast that is easy to prepare and perfect for family dinners.


Ingredients

Scale
  • 34 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the crockpot.
  4. Add chopped onion, minced garlic, sliced carrots, and diced potatoes around the roast.
  5. In a bowl, mix beef broth, Worcestershire sauce, thyme, and rosemary, then pour over the roast and vegetables.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours until the meat is tender.
  7. Once done, remove the roast and vegetables, and let the roast rest before slicing.
  8. Serve with the cooking liquid as gravy.

Notes

  • For extra flavor, add a splash of red wine to the broth.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This dish can be frozen for up to 3 months.
