Description

Ingredients

  • 34 lbs chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the crock pot.
  4. Add chopped onion, minced garlic, carrots, and potatoes around the roast.
  5. Pour beef broth and Worcestershire sauce over the ingredients.
  6. Sprinkle thyme on top.
  7. Cover and cook on low for 8-10 hours or high for 4-6 hours until the meat is tender.
