- 1 lb carrots, peeled and cut into sticks
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the carrot sticks with olive oil, minced garlic, salt, pepper, and thyme until well coated.
- Spread the carrots in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to brown.
- Remove from the oven and sprinkle with grated Parmesan cheese.
- Return to the oven for an additional 5 minutes, or until the cheese is melted and golden.
