Instructions
- In a pot, bring water and salt to a boil.
- Slowly whisk in the polenta, stirring constantly until thickened.
- Pour the polenta into a greased baking dish and let it cool completely.
- Once cooled, cut the polenta into stacks or rounds.
- Heat olive oil in a skillet over medium heat and fry the polenta stacks until crispy on both sides.
- In a bowl, mix cranberry sauce, honey, and lemon juice to create the relish.
- Top each crispy polenta stack with a spoonful of cranberry relish.
- Garnish with fresh herbs if desired and serve warm.

- For a vegan option, substitute honey with maple syrup.
