- 2 medium zucchinis, sliced into rounds
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 425ยฐF (220ยฐC).
- In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini round into the egg, then coat with the breadcrumb mixture.
- Place the coated zucchini rounds on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve warm and enjoy!
Notes
- For extra crunch, you can use panko breadcrumbs.
- Feel free to add your favorite spices to the breadcrumb mixture.
- These can be served with marinara sauce for dipping.
