Description

Deliciously crispy zucchini rounds coated in Parmesan cheese, perfect as a snack or side dish.


Ingredients

  • 2 medium zucchinis, sliced into rounds
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425ยฐF (220ยฐC).
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. In another bowl, beat the eggs.
  4. Dip each zucchini round into the egg, then coat with the breadcrumb mixture.
  5. Place the coated zucchini rounds on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes or until golden brown and crispy.
  7. Serve warm and enjoy!

Notes

  • For extra crunch, you can use panko breadcrumbs.
