These Creepy Keto Bat Cupcakes are a fun and spooky treat perfect for Halloween, made with low-carb ingredients to fit a keto diet.


Ingredients

  • 1/4 cup cocoa powder
  • 1/2 cup erythritol
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • Black food coloring (optional)
  • Buttercream frosting (keto-friendly)
  • Chocolate bat decorations

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, mix together almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, whisk the eggs, almond milk, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed. Add black food coloring if desired.
  5. Pour the batter into the cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. Frost with keto-friendly buttercream and decorate with chocolate bat decorations.
