- 4 cups vegetable broth
- 1 cup heavy cream
- 1 package (9 oz) cheese ravioli
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in vegetable broth and bring to a simmer.
- Add heavy cream and stir to combine.
- Introduce the ravioli and cook according to package instructions.
- Once ravioli is cooked, add spinach, cherry tomatoes, and Italian seasoning.
- Season with salt and pepper to taste.
- Simmer for a few more minutes until spinach is wilted.
- Serve hot and enjoy!
