Description

A warm and comforting creamy sweet potato soup that is vegan-friendly, perfect for cozy nights.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the diced sweet potatoes, vegetable broth, ground ginger, and ground cinnamon. Bring to a boil.
  3. Reduce heat and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
  4. Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
  5. Stir in the coconut milk and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh cilantro.
