- 6 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/2 cup milk
- 1/4 cup butter
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the diced potatoes and broth, bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and milk, and season with salt and pepper.
- Heat through and serve hot, garnished with chives.
Notes
- For a thicker soup, blend a portion of the soup and return it to the pot.
- Feel free to add bacon bits for extra flavor.
