- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Using an immersion blender, blend the soup until smooth.
- Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a lighter version, substitute heavy cream with half-and-half or milk.
- Feel free to add other vegetables like carrots or cauliflower for added flavor.
