- 1 cup wild rice
- 2 cups vegetable broth
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the wild rice under cold water.
- In a pot, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the wild rice and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for about 45 minutes or until the rice is tender.
- Stir in the dried cranberries and chopped pecans, and season with salt and pepper.
- Remove from heat and let it sit for 5 minutes before fluffing with a fork.
- Garnish with fresh parsley before serving.
