- 1 pre-made tart shell
- 1 cup fresh cranberries
- 1 cup sugar
- 1/2 cup fresh orange juice
- 2 tablespoons orange zest
- 3 large eggs
- 1/2 cup unsalted butter, cubed
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- In a saucepan, combine cranberries, sugar, orange juice, and orange zest. Cook over medium heat until cranberries burst.
- In a bowl, whisk together eggs. Gradually add the cranberry mixture to the eggs, stirring constantly.
- Return the mixture to the saucepan and cook until thickened.
- Remove from heat and stir in the butter until melted and smooth.
- Pour the curd into the pre-made tart shell and smooth the top.
- Bake for 20-25 minutes until set.
- Let cool before serving.
Notes
- For a sweeter tart, adjust the sugar to taste.
- Can be served with whipped cream or a dusting of powdered sugar.
- Store leftovers in the refrigerator for up to 3 days.
