Ingredients

  • 1 pre-made tart shell
  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1/2 cup fresh orange juice
  • 2 tablespoons orange zest
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC).
  2. In a saucepan, combine cranberries, sugar, orange juice, and orange zest. Cook over medium heat until cranberries burst.
  3. In a bowl, whisk together eggs. Gradually add the cranberry mixture to the eggs, stirring constantly.
  4. Return the mixture to the saucepan and cook until thickened.
  5. Remove from heat and stir in the butter until melted and smooth.
  6. Pour the curd into the pre-made tart shell and smooth the top.
  7. Bake for 20-25 minutes until set.
  8. Let cool before serving.
