- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 package (16 ounces) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and cook for another minute until fragrant.
- Stir in crushed tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a simmer.
- Add gnocchi to the pot and cook according to package instructions, usually about 3-5 minutes.
- Stir in fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a creamier soup, add a splash of heavy cream or coconut milk before serving.
- Feel free to add other vegetables like carrots or bell peppers for extra nutrition.
