Ingredients

  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth

  • 1 package (16 ounces) gnocchi
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, dried basil, and dried oregano. Bring to a simmer.
  4. Add gnocchi to the pot and cook according to package instructions, usually about 3-5 minutes.
  5. Stir in fresh spinach and cook until wilted.
  6. Season with salt and pepper to taste.
