Ingredients

- 1 lb sausage
- 2 medium sweet potatoes, diced
- 4 cups kale, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add sausage and cook until browned.
- Stir in diced sweet potatoes and cook for 5 minutes.
- Add chicken broth, thyme, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 20 minutes, or until sweet potatoes are tender.
- Add chopped kale and cook for an additional 5 minutes.
