Ingredients

  • 2 cups white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add soaked white beans, vegetable broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  6. Remove bay leaf, season with salt and pepper, and serve hot.
