Description

Coffin Quesadillas are a fun and spooky Halloween-themed dish that combines cheesy goodness with a creative presentation, perfect for a festive dinner.


Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1 tablespoon taco seasoning
  • Cooking spray or oil for frying

Instructions

  1. In a bowl, mix together the shredded chicken, black beans, corn, bell peppers, onions, and taco seasoning.
  2. Lay one tortilla flat and sprinkle half of the cheese on one half of the tortilla.
  3. Add a generous amount of the chicken mixture on top of the cheese.
  4. Fold the tortilla over to create a half-moon shape.
  5. Repeat with the remaining tortillas and filling.
  6. Heat a skillet over medium heat and spray with cooking spray or oil.
  7. Cook each quesadilla for 3-4 minutes on each side until golden brown and the cheese is melted.
  8. Remove from the skillet and use a knife to cut out coffin shapes from each quesadilla.
  9. Serve warm with salsa or guacamole.

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • For a vegetarian option, omit the chicken and add more beans or vegetables.
  • These can be made ahead of time and reheated in the oven.
