Coffin Quesadillas are a fun and spooky Halloween-themed dish that combines cheesy goodness with a creative presentation, perfect for a festive dinner.

- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1 tablespoon taco seasoning
- Cooking spray or oil for frying
Instructions
- In a bowl, mix together the shredded chicken, black beans, corn, bell peppers, onions, and taco seasoning.
- Lay one tortilla flat and sprinkle half of the cheese on one half of the tortilla.
- Add a generous amount of the chicken mixture on top of the cheese.
- Fold the tortilla over to create a half-moon shape.
- Repeat with the remaining tortillas and filling.
- Heat a skillet over medium heat and spray with cooking spray or oil.
- Cook each quesadilla for 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and use a knife to cut out coffin shapes from each quesadilla.
- Serve warm with salsa or guacamole.
Notes
- Feel free to customize the filling with your favorite ingredients.
- For a vegetarian option, omit the chicken and add more beans or vegetables.
- These can be made ahead of time and reheated in the oven.
