- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup brewed coffee, cooled
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee, until just combined.
- In a small bowl, mix brown sugar, cinnamon, and chopped nuts to create the streusel topping.
- Drop spoonfuls of cookie dough onto the prepared baking sheet and sprinkle the streusel topping over each cookie.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a stronger coffee flavor, use espresso instead of regular brewed coffee.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add chocolate chips for an extra treat!
