Description

Coffee Cake Cookies are a delightful blend of soft, cake-like cookies infused with the rich flavor of coffee, topped with a sweet crumbly streusel.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee, cooled
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the brewed coffee, until just combined.
  6. In a small bowl, mix brown sugar, cinnamon, and chopped nuts to create the streusel topping.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet and sprinkle the streusel topping over each cookie.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger coffee flavor, use espresso instead of regular brewed coffee.
  • These cookies can be stored in an airtight container for up to a week.
