Description

Ingredients

Scale
  • 2 lbs chicken breast
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place the chicken breast at the bottom of the crockpot.
  2. Add the diced carrots, celery, and onion on top of the chicken.
  3. Stir in the minced garlic, thyme, rosemary, salt, and pepper.
  4. Pour the vegetable broth over the ingredients in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and mix it back into the soup.
  7. Serve hot and enjoy your healthy meal!
