Description

A delicious and festive sweet potato casserole perfect for holiday gatherings, featuring a creamy filling topped with a crunchy pecan and brown sugar topping.


Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup chopped pecans
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, milk, brown sugar, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth.
  3. Transfer the sweet potato mixture to a greased baking dish.
  4. In a separate bowl, mix the chopped pecans with the remaining brown sugar and sprinkle over the sweet potato mixture.
  5. If desired, add mini marshmallows on top of the pecan mixture.
  6. Bake in the preheated oven for 30-35 minutes, or until heated through and the topping is golden brown.
  7. Let cool slightly before serving.

Notes

  • For a vegan version, substitute milk with almond milk and eggs with flax eggs.
  • Can be prepared a day in advance and baked just before serving.
  • Adjust the sweetness by adding more or less brown sugar according to taste.
