Description

A hearty and comforting slow cooker dish featuring tender beef, rich gravy, and served over creamy mashed potatoes.


Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1/4 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. In a slow cooker, combine the beef, onion, garlic, beef broth, carrots, potatoes, soy sauce, Worcestershire sauce, and thyme.
  3. Cover and cook on low for 8 hours or until the beef is tender.
  4. In the last 30 minutes of cooking, add the frozen peas.
  5. Once done, shred the beef and mix it back into the gravy.
  6. Serve over mashed potatoes or with crusty bread.

Notes

  • For a thicker gravy, mix 2 tbsp of cornstarch with water and stir it into the slow cooker during the last hour of cooking.
  • Feel free to add other vegetables like bell peppers or green beans.
  • This dish can be made a day ahead and reheated for best flavors.
