A hearty and comforting slow cooker dish featuring tender beef, rich gravy, and served over creamy mashed potatoes.
Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup frozen peas
- 1/4 cup soy sauce
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Season the beef chuck roast with salt and pepper.
- In a slow cooker, combine the beef, onion, garlic, beef broth, carrots, potatoes, soy sauce, Worcestershire sauce, and thyme.
- Cover and cook on low for 8 hours or until the beef is tender.
- In the last 30 minutes of cooking, add the frozen peas.
- Once done, shred the beef and mix it back into the gravy.
- Serve over mashed potatoes or with crusty bread.
Notes
- For a thicker gravy, mix 2 tbsp of cornstarch with water and stir it into the slow cooker during the last hour of cooking.
- Feel free to add other vegetables like bell peppers or green beans.
- This dish can be made a day ahead and reheated for best flavors.
