Delicious and festive cinnamon swirl pancakes topped with a spooky drizzle, perfect for a fun breakfast.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup powdered sugar (for drizzle)
  • 1 tablespoon milk (for drizzle)
  • Food coloring (optional, for spooky drizzle)

Instructions

  1. In a bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. In a small bowl, mix cinnamon and brown sugar for the swirl.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet.
  6. Sprinkle the cinnamon-brown sugar mixture on top of the batter.
  7. Pour a little more batter on top to cover the swirl.
  8. Cook until bubbles form on the surface, then flip and cook until golden brown.
  9. For the spooky drizzle, mix powdered sugar with milk and add food coloring if desired.
  10. Drizzle over pancakes and serve warm.

Notes

  • Adjust the amount of cinnamon to taste.
  • For a vegan version, substitute milk with plant-based milk and egg with a flax egg.
  • These pancakes can be made ahead and reheated in the toaster.
