- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- 1/2 cup powdered sugar (for drizzle)
- 1 tablespoon milk (for drizzle)
- Food coloring (optional, for spooky drizzle)
Instructions
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- In a small bowl, mix cinnamon and brown sugar for the swirl.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter onto the skillet.
- Sprinkle the cinnamon-brown sugar mixture on top of the batter.
- Pour a little more batter on top to cover the swirl.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- For the spooky drizzle, mix powdered sugar with milk and add food coloring if desired.
- Drizzle over pancakes and serve warm.
Notes
- Adjust the amount of cinnamon to taste.
- For a vegan version, substitute milk with plant-based milk and egg with a flax egg.
- These pancakes can be made ahead and reheated in the toaster.
