A delicious and spicy Chipotle Chicken Panini inspired by Panera, featuring grilled chicken, chipotle mayo, and fresh vegetables.


Ingredients

  • 1 ciabatta roll
  • 4 oz grilled chicken breast
  • 2 tbsp chipotle mayo
  • 1 slice pepper jack cheese
  • 1/4 avocado, sliced
  • 1/4 cup fresh spinach
  • 1/4 cup roasted red peppers
  • Salt and pepper to taste

Instructions

  1. Preheat a panini press or grill pan.
  2. Spread chipotle mayo on the inside of the ciabatta roll.
  3. Layer the grilled chicken, pepper jack cheese, avocado, spinach, and roasted red peppers on one half of the roll.
  4. Season with salt and pepper.
  5. Close the sandwich and place it in the panini press or grill pan.
  6. Cook until the bread is golden brown and the cheese is melted, about 3-5 minutes.
  7. Remove from heat, slice in half, and serve warm.
