A delicious and spicy Chipotle Chicken Panini inspired by Panera, featuring grilled chicken, chipotle mayo, and fresh vegetables.

- 1 ciabatta roll
- 4 oz grilled chicken breast
- 2 tbsp chipotle mayo
- 1 slice pepper jack cheese
- 1/4 avocado, sliced
- 1/4 cup fresh spinach
- 1/4 cup roasted red peppers
- Salt and pepper to taste
Instructions
- Preheat a panini press or grill pan.
- Spread chipotle mayo on the inside of the ciabatta roll.
- Layer the grilled chicken, pepper jack cheese, avocado, spinach, and roasted red peppers on one half of the roll.
- Season with salt and pepper.
- Close the sandwich and place it in the panini press or grill pan.
- Cook until the bread is golden brown and the cheese is melted, about 3-5 minutes.
- Remove from heat, slice in half, and serve warm.
Notes
- For a vegetarian option, substitute grilled chicken with grilled vegetables.
- Adjust the amount of chipotle mayo based on your spice preference.
- Serve with a side of chips or a salad for a complete meal.
