- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/2 cup onion, finely chopped
- 2 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 cup ketchup (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground chicken, breadcrumbs, parmesan cheese, garlic, parsley, onion, eggs, salt, pepper, and Italian seasoning.
- Mix until well combined.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- Spread ketchup on top of the meatloaf.
- Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before slicing and serving.
Notes
- For added moisture, you can include a splash of milk in the mixture.
- Serve with mashed potatoes or a side salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
