A quick and delicious chicken burrito casserole that combines all the flavors of a classic burrito in a convenient baked dish.

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups cooked rice
- 1 teaspoon taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 4 large tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, cooked rice, and taco seasoning.
- In a greased 9×13 inch baking dish, layer half of the tortilla strips on the bottom.
- Spread half of the chicken mixture over the tortillas.
- Sprinkle with half of the cheese.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to customize with your favorite burrito toppings like sour cream or guacamole.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be stored in an airtight container for up to 3 days.
