- 1 box chocolate cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- Halloween-themed sprinkles
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- Prepare the chocolate cake mix according to package instructions.
- In a separate bowl, beat together cream cheese, sugar, vanilla, pumpkin puree, cinnamon, nutmeg, and salt until smooth.
- Fill each cupcake liner halfway with chocolate cake batter.
- Add a spoonful of the cheesecake mixture on top of the batter.
- Top with more chocolate cake batter until the liners are about 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool and decorate with Halloween-themed sprinkles.
Notes
- For a richer flavor, add chocolate chips to the cake batter.
- Store leftovers in an airtight container in the refrigerator.
- These cupcakes can be made a day in advance for convenience.
