Description

Ingredients

  • 2 tablespoons of vegetable oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 2 tablespoons of curry powder
  • 1 can of coconut milk (400ml)
  • 1 cup of vegetable broth
  • 2 cups of mixed vegetables (carrots, bell peppers, peas)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute.
  4. Add the curry powder and cook for 2 minutes to release the flavors.
  5. Pour in the coconut milk and vegetable broth, stirring to combine.
  6. Add the mixed vegetables and bring the mixture to a simmer.
  7. Season with salt and pepper to taste.
  8. Let it cook for 15-20 minutes until the vegetables are tender.
