- 2 tablespoons of vegetable oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 2 tablespoons of curry powder
- 1 can of coconut milk (400ml)
- 1 cup of vegetable broth
- 2 cups of mixed vegetables (carrots, bell peppers, peas)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute.
- Add the curry powder and cook for 2 minutes to release the flavors.
- Pour in the coconut milk and vegetable broth, stirring to combine.
- Add the mixed vegetables and bring the mixture to a simmer.
- Season with salt and pepper to taste.
- Let it cook for 15-20 minutes until the vegetables are tender.
- Garnish with fresh cilantro before serving.
