- 2 large onions, thinly sliced

- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and add the sliced onions.
- Sprinkle sugar over the onions and cook, stirring occasionally, until the onions are caramelized, about 20-25 minutes.
- Roll out the puff pastry and cut it into squares.
- Place the pastry squares on a baking sheet lined with parchment paper.
- Top each pastry square with a spoonful of caramelized onions and crumbled goat cheese.
- Sprinkle fresh thyme, salt, and pepper on top.
- Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown.
