Caldo de Res is a traditional Mexican beef soup that is hearty, flavorful, and perfect for any occasion.
Ingredients

- 2 lbs beef shank
- 10 cups water
- 2 medium carrots, chopped
- 2 medium potatoes, chopped
- 1 medium zucchini, chopped
- 1/2 head of cabbage, chopped
- 1 onion, quartered
- 2 cloves garlic, minced
- 2 ears of corn, cut into pieces
- 1 bunch cilantro, chopped
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, combine the beef shank and water. Bring to a boil and skim off any foam that rises to the surface.
- Add the onion, garlic, and salt. Reduce heat and simmer for about 1.5 hours or until the beef is tender.
- Add the carrots, potatoes, and corn. Cook for an additional 15 minutes.
- Stir in the zucchini and cabbage, and cook for another 10 minutes until all vegetables are tender.
- Adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with fresh cilantro.
Notes
- For a richer flavor, you can roast the beef shank before adding it to the pot.
- Feel free to add other vegetables like green beans or bell peppers.
- This soup can be served with lime wedges and tortillas on the side.
