Description

Caldo de Res is a traditional Mexican beef soup that is hearty, flavorful, and perfect for any occasion.


Ingredients

  • 2 lbs beef shank
  • 10 cups water
  • 2 medium carrots, chopped
  • 2 medium potatoes, chopped
  • 1 medium zucchini, chopped
  • 1/2 head of cabbage, chopped
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 2 ears of corn, cut into pieces
  • 1 bunch cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, combine the beef shank and water. Bring to a boil and skim off any foam that rises to the surface.
  2. Add the onion, garlic, and salt. Reduce heat and simmer for about 1.5 hours or until the beef is tender.
  3. Add the carrots, potatoes, and corn. Cook for an additional 15 minutes.
  4. Stir in the zucchini and cabbage, and cook for another 10 minutes until all vegetables are tender.
  5. Adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished with fresh cilantro.

Notes

  • For a richer flavor, you can roast the beef shank before adding it to the pot.
  • Feel free to add other vegetables like green beans or bell peppers.
