Instructions
- Place the chicken breast in the crockpot.
- Add the vegetable broth, diced tomatoes, chopped onions, minced garlic, Italian seasoning, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last hour of cooking, add the frozen mixed vegetables.
- Once cooked, shred the chicken and mix well before serving.
