Crispy and flavorful Brussels Sprout Latkes served with a sweet and tangy maple sour cream.

- 2 cups Brussels sprouts, shredded
- 1 medium potato, grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
- 1/2 cup sour cream
- 2 tablespoons maple syrup
Instructions
- In a large bowl, combine the shredded Brussels sprouts, grated potato, and grated onion.
- Add the eggs, flour, salt, and pepper to the mixture and stir until well combined.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil, flattening them slightly to form latkes.
- Fry until golden brown on both sides, about 4-5 minutes per side.
- Remove latkes and drain on paper towels.
- In a small bowl, mix the sour cream and maple syrup together.
- Serve the latkes warm with the maple sour cream on the side.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Make sure the oil is hot enough before frying to ensure crispy latkes.
- Latkes can be kept warm in the oven while frying the remaining batches.
