Description

Crispy and flavorful Brussels Sprout Latkes served with a sweet and tangy maple sour cream.


Ingredients

  • 2 cups Brussels sprouts, shredded
  • 1 medium potato, grated
  • 1 small onion, grated
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying
  • 1/2 cup sour cream
  • 2 tablespoons maple syrup

Instructions

  1. In a large bowl, combine the shredded Brussels sprouts, grated potato, and grated onion.
  2. Add the eggs, flour, salt, and pepper to the mixture and stir until well combined.
  3. Heat oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly to form latkes.
  5. Fry until golden brown on both sides, about 4-5 minutes per side.
  6. Remove latkes and drain on paper towels.
  7. In a small bowl, mix the sour cream and maple syrup together.
  8. Serve the latkes warm with the maple sour cream on the side.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Make sure the oil is hot enough before frying to ensure crispy latkes.
  • Latkes can be kept warm in the oven while frying the remaining batches.
