- 4 cups mashed sweet potatoes
- 1 cup brown sugar
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, and salt. Mix until smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix the chopped pecans with a little brown sugar and sprinkle over the sweet potato mixture.
- If desired, add mini marshmallows on top.
- Bake in the preheated oven for 30-35 minutes, or until heated through and the top is golden brown.
- Let cool slightly before serving.
Notes
- For a richer flavor, use dark brown sugar.
- This casserole can be made ahead of time and reheated before serving.
- Feel free to add spices like cinnamon or nutmeg for extra warmth.
