Description

Bomboloni Alla Crema are delicious Italian cream-filled doughnuts that are soft, fluffy, and perfect for any occasion.


Ingredients

  • 500g all-purpose flour
  • 100g sugar
  • 10g salt
  • 25g fresh yeast
  • 250ml milk
  • 3 large eggs
  • 100g unsalted butter, softened
  • 1 liter vegetable oil (for frying)
  • 500g pastry cream (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. In a bowl, dissolve the yeast in warm milk and let it sit for 10 minutes.
  2. In a large mixing bowl, combine flour, sugar, and salt.
  3. Add the yeast mixture and eggs to the dry ingredients and mix until a dough forms.
  4. Knead the dough for about 10 minutes until smooth.
  5. Incorporate the softened butter and knead until fully combined.
  6. Cover the dough and let it rise in a warm place for about 1 hour or until doubled in size.
  7. Once risen, punch down the dough and roll it out to about 1 cm thickness.
  8. Cut out circles using a cookie cutter and place them on a floured surface to rise for another 30 minutes.
  9. Heat the vegetable oil in a deep pan to 180°C (350°F).
  10. Fry the doughnuts until golden brown on both sides, about 2-3 minutes each.
  11. Remove from oil and let them drain on paper towels.
  12. Once cooled, fill each doughnut with pastry cream using a piping bag.
  13. Dust with powdered sugar before serving.

Notes

  • Ensure the oil is at the right temperature to avoid greasy doughnuts.
  • Pastry cream can be made ahead of time and refrigerated.
  • For a twist, add lemon or orange zest to the pastry cream.
