- 1 can black beans, rinsed and drained
- 1 ripe avocado, mashed
- 4 whole wheat tortillas
- 1 cup cherry tomatoes, halved
- 1/2 cup corn, canned or frozen
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a bowl, combine the black beans, mashed avocado, cherry tomatoes, corn, cilantro, lime juice, salt, and pepper.
- Mix well until all ingredients are combined.
- Lay out the whole wheat tortillas on a flat surface.
- Divide the black bean and avocado mixture evenly among the tortillas.
- Wrap the tortillas tightly, folding in the sides as you roll.
- Slice the wraps in half and serve immediately or wrap in foil for later.
