Description

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 ripe avocado, mashed
  • 4 whole wheat tortillas
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn, canned or frozen
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the black beans, mashed avocado, cherry tomatoes, corn, cilantro, lime juice, salt, and pepper.
  2. Mix well until all ingredients are combined.
  3. Lay out the whole wheat tortillas on a flat surface.
  4. Divide the black bean and avocado mixture evenly among the tortillas.
  5. Wrap the tortillas tightly, folding in the sides as you roll.
  6. Slice the wraps in half and serve immediately or wrap in foil for later.
