- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add bell pepper and zucchini, cook for another 5 minutes.
- Stir in the diced tomatoes, vegetable broth, and Italian seasoning.
- Bring to a boil, then add the orzo pasta.
- Reduce heat and simmer for about 10-12 minutes, or until the orzo is cooked.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
