- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef stew meat over medium heat.
- Add the chopped onion, carrots, celery, and garlic; sauté until the vegetables are tender.
- Stir in the barley, beef broth, diced tomatoes, thyme, and bay leaf.
- Bring the mixture to a boil, then reduce heat and simmer for about 1 hour, or until the beef is tender.
- Season with salt and pepper to taste before serving.
