Description
A hearty and flavorful beef stew made with tender chunks of beef, vegetables, and rich Guinness beer.

- 2 lbs beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 bottle (14.9 oz) Guinness beer
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons flour (optional, for thickening)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside. In the same pot, add onions, carrots, and celery; sauté until softened.
- Add garlic and tomato paste, cooking for an additional minute.
- Return the beef to the pot and pour in the Guinness beer.
- Add beef broth, bay leaves, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until the beef is tender.
- If desired, mix flour with a little water to create a slurry and stir into the stew to thicken.
- Remove bay leaves before serving.
Notes
- Serve with crusty bread for a complete meal.
- This stew can be made a day in advance for better flavor.
- Adjust seasoning according to taste.
